Ingredients of Karela Seekh Kebab
- 2 bitter gourd
- 1 teaspoon cumin seeds
- 1 tablespoon chopped ginger
- 100 gm spinach
- ½ teaspoon powdered black pepper
- ½ cup khoya
- ½ cup gram flour (besan)
- 1 tablespoon ghee
- 2 tablespoons minced garlic
- 100 gm green beans
- 200 grated potato
- 5 almonds
- 50 gm corn
- salt as required
Instructions
- De-seed the karela and boil them. Soak in cold water to cool down. Finely chop the boil karela and add to a bowl.
- Add ghee to a pan and let it heat.
- Add cumin seeds and let them sputter.
- Add garlic, ginger and saute till golden brown till the raw smell goes away.
- Add Karela, potatoes, black pepper, beans, and salt.
- Then allow it cook for about a couple of minutes.
- Add khoya, almonds, and corn.
- Add roasted gram flour to fold the mixture into a dough. Prepare a soft and mushy dough. Season it with pepper, salt and cumin seeds.
- Make kebabs with this dough, insert into the tandoor rod for roasting and put them inside the tandoor to roast them.
- Cook the wrapped seekh kebab till they are crisp. The karela seekh kebabs are ready!
- Once roasted, serve with mint and chilli chutney.

The recipe looks really enticing, the much, “dreaded,” Karela has got a makeover. Of course, it is such a healthy vegetable, but you have infused a lot of taste and flavour into it.
