Refreshingly Delicious Macaroni and Coconut Salad (Khao Pad Mor Mee)

Refreshingly Delicious Macaroni and Coconut Salad (Khao Pad Mor Mee) is one of those dishes that I think every country has its own version of. Some are creamy with mayonnaise, some are mustardy, some are eggy. Some are colorful, others more discreet.

This Macaroni Coconut Salad is from Thailand and it’s different than any other I’ve tasted so far because it’s not only creamy but also refreshingly light with a tangy dressing thanks to the lime juice and chilli jam.

The good thing about this dish? It’s so easy to prepare and much more delicious and healthy than regular macaroni salad!

As the name suggests, this salad consists of 2 main ingredients: macaroni (or mee in Thai) and coconut.  

For the dressing, you’ll need fish sauce, palm sugar or brown sugar, chilli jam, or chillies sweetened in sugar syrup, lime juice and garlic.

The ingredient list might look long but it’s really simple to prepare it. The only part that takes more time is the boiling of the noodles (boil for about 7 minutes).  

Once you’ve done that, wash your hands and put everything else together then let them sit in a fridge.  The lemon juice and sugar will dissolve but the macaroni salad is going to taste much better on the 2nd or 3rd day.

Salads such as macaroni & coconut are refreshing and delicious. Healthy and wholesome, this salad is best served chilled. Easy and simple to make, this salad is enjoyed by children as well as adults.

Coconut and elbow pasta (macaroni) are used in this unique salad. This salad does not contain any fancy dressing, cream, or mayonnaise, making it a healthy dish. With just minimal basic ingredients, this salad is a show-stopper.

Fresh cucumbers, red ripe tomatoes, onions, and freshly grated coconut were used in this recipe.

Seasonings for macaroni salad include salt, sugar, pepper, lemon juice, and celery. In addition to the parsley and coriander, you can use mint and coriander in the salad.

Ingredients for Refreshingly Delicious Macaroni and Coconut Salad 

  • 1 and ½ cups macaroni boiled [BUY HERE]
  • ½ cup tomatoes diced without seeds
  • ½ cup cucumber diced without seeds
  • 3/4 cup onion diced
  • 1 tbsp celery/ coriander chopped
  • 1 Avocado (option) [BUY HERE]
  • 1 cup Shredded Chicken (optional)
  • 1 cup scraped coconut (grated fine)
  • ½ tsp white/black pepper
  • 1 tbsp sugar
  • 1 tbsp lemon juice
  • Salt to taste
  • Tabasco sauce (optional)

Directions Refreshingly Delicious Macaroni and Coconut Salad 

  1. Put the boiled macaroni in a large mixing bowl, toss in all the ingredients, and mix well.
  2. Seasoning should be checked before serving.
  3. Refrigerate for at least 1 hour for the best taste before serving.
