Ingredients of Organic Palm Jaggery Malpua

  • 1 cup refined flour
  • ¼ cup grated palm jaggery
  • ½ teaspoon fennel seeds
  • 120 ml water
  • ½ cup water
  • ghee as required
  • ½ cup semolina
  • ¼ teaspoon powdered green cardamom
  • ½ cup milk
  • 1 cup palm jaggery
  • 2 strand saffron

For Garnishing

  • 4 teaspoons crushed mixed dry fruits
  • readymade rabri as required

Instructions for Organic Palm Jaggery Malpua

Prepare the batter

  • In a large mixing bowl, take refined flour, semolina, grated palm jaggery, fennel and cardamom powder. 
  • Add milk, and mix slowly in one direction, ensuring there are no lumps in the batter; later, add water and mix well, batter to be of smooth pouring consistency.

Make the malpuas

  • Further whisk the batter for at least 5 minutes, cover and rest the batter for 30 minutes. 
  • Heat ghee in a kadhai for frying. 
  • Now pour a ladle quantity of batter into hot oil/ ghee; once the malpua starts floating, splash oil over malpuas and press gently with the help of a perforated spoon. This way, the malpuas will puff up like pooris.

Soak in sugar syrup

  • Now fry both sides till they turn golden brown, drain the malpuas onto a kitchen towel to remove excess oil & soak the malpuas in hot jaggery syrup. 
  • Rest for 10 minutes, ensuring both sides of the malpua are soaked well.
  • Finally, garnish the malpuas with rabri and nuts.
