Aloo paneer kofta recipe will melt in the mouth with its soft texture delicious paneer kofta with a crisp exterior.

My son had made this paneer kofta for the malai kofta gravy recipe. So half of this aloo paneer kofta went in the Malai kofta gravy for the family and the other half was consumed by me and my daughter for our fasting snacks.

In this recipe, the koftas are made with mashed potatoes, paneer, and spices. It can also be made during religious fasting (vrat) or for Navratri fasting.

This aloo paneer kofta can be made as a tea-time snack or can be added in an onion tomato gravy, bhuna masala gravy, or just tomato ginger gravy (for fasting) and then served as a kofta gravy dish for lunch or dinner. They taste good as a snack and also in a gravy dish.

    Ingredients

    • 200 grams Paneer (cottage cheese) – grated
    • 3 medium-sized potatoes (aloo) – which have been boiled and peeled and then grated
    • ½ teaspoon black pepper powder or crushed black pepper [BUY ONLINE]
    • ¼-½ tsp red chili powder [BUY ONLINE]
    • ¼-½ tsp FoodAllTime Garam Masala Powder avoid while fasting
    • 1-1.5 tbsp chopped coriander leaves (cilantro leaves)
    • 1.5-2 tbsp cornflour (corn starch) [BUY ONLINE] avoid while fasting. use Kuttu ka atta/ singhara ka atta
    • 2-3 tbsp mixed chopped dry fruits – almonds, cashews, pistachios, and raisins [BUY ONLINE]
    • 1½ tbsp almond flour or one tbsp milk powder or 1½ tablespoon khoya (mawa or dried evaporated milk solids)
    • vegetable oil for frying – I used rice bran oil [BUY ONLINE]
    • rock salt or regular salt as required [BUY ONLINE]
    • chaat masala as required (optional) [BUY ONLINE]

    Cooking Instructions For Aloo Paneer Kofta

    1. Combine all ingredients except the dried fruits in a bowl.
    2. If necessary, add more salt or spice powders.
    3. Make a medium-sized ball out of the mixture and flatten it slightly.
    4. Put the dry fruits in the center.
    5. Cover the dry fruits completely with the edges pointing toward the center.
    6. Seal the kofta well, so they don’t break when frying. Prepare all the paneer ka koftas this way.
    7. The oil needs to be heated in a pan or kadai before deep frying.
    8. Add the stuffed koftas and fry till golden brown from all over. Remove excess oil from them by blotting them with paper tissues.
    9. Aloo paneer kofta tastes best hot or warm, accompanied by either green chutney or sweet chutney, and topped with chaat masala.
    10. Malai kofta curry can also be prepared with them.

    Recipe Notes How To Cook Aloo Paneer Ka Kofta

    • I added 1.5 tbsp cornflour/corn starch to the kofta mixture, and the koftas did not break. However, when making koftas, just add a small ball of the mixture first in the oil and if it does not break, then move ahead with frying the rest of the koftas.
    • If the paneer kofta does break, then add some more cornflour to bind them well.
    • The oil has to be medium hot. Too hot oil will brown the paneer kofta quickly, with the inside remaining uncooked. On the other hand, warm oil will make the paneer koftas soak oil and become greasy. The texture in the latter case also would not be good.

    If Making Aloo Paneer Kofta For Fasting Or Vrat

    • Use rock salt (sendha namak) instead of regular salt.
    • Substitute the cornflour with fasting flours like water chestnut flour (singhare ka atta), buckwheat flour (kuttu ka atta), or arrowroot flour.
    • Skip adding garam masala powder, chaat masala powder, or any other ingredient which don’t use for religious fasting at your home.
