Ingredients
For The Pizza Dough
- 250 grams (9 oz.) plain flour
- 10 grams (½ oz.) fresh yeast or
- 1 teaspoon dry yeast 2 teaspoons oil
- ½ teaspoon sugar
- ½ teaspoon salt
For The Filling
- 1 packet (200 grams) fresh mushrooms or 2 tea cups cooked corn
- 1 chopped onion
- 1 chopped capsicum
- 1 tablespoon oil
- 1 teaspoon lemon juice
- 2 chopped green chillies
- salt to taste
For The Pizza Sauce
- 500 grams (1% lb.) red tomatoes
- 1 onion, chopped
- 3 cloves garlic, crushed
- ½ teaspoon chilli powder
- 1 teaspoon sugar (approx.)
- 2 tablespoons oil salt to taste
For The Baking
- 1 teacup Bechamel Sauce/White Sauce
- 5 to 6 tablespoons grated cheese
- Mozzarella Cheese
Cooking Instructions
For The Filling
- Heat the oil and fry the onion for 1 minute.
- Add the capsicums and green chillies and fry again for 1 minute.
- Chop the mushrooms.
- Add the chopped mushrooms, lemon juice and salt and cook for 3 minutes.
- Drain.
For The Pizza Sauce
- Chop the tomatoes. Drain the liquid.
- Heat the oil and fry the onion and garlic for 1 to 2 minutes.
- Add the chopped tomatoes, chilli powder, sugar and salt and boil until the tomatoes are soft.
- Blend in a liquidiser.
For The Pizza Dough
- Sieve the flour with the sugar and salt.
- Add the oil and mix well.
- Make a well in the centre. Crumble the yeast and put in this well.
- Sprinkle ½ teacup of warm water over the yeast. Wait for 5 minutes.
- Mix the yeast with the flour. Add enough water to make a semi-soft dough.
- Knead the pizza dough for 5 to 7 minutes.
- Cover the dough with a wet cloth and leave for 45 minutes or until double in size.
- Knead the dough for 1 minute.
For The Baking
- Roll out the dough into thin puris to fit a muffin tray.
- Grease a muffin tray thoroughly and press the puris inside.
- After 10 minutes, spread a little filling, plenty of pizza sauce and a little white sauce on each round.
- Sprinkle the Mozzarella Cheese on top and bake in a hot oven at 200°C (400°F) for 10 to 12 minutes.
- Serve hot.
Note: Instead of the above pizza dough, you can straightaway use readymade pizza bread.
