Yummy Mexican Salad with Nacho Chips

This is an appetizer that can be enjoyed by all age groups, the Yummy Mexican Salad with Nacho Chips is a great appetizer that’s healthy and delicious. It’s a great way to get your family or friends to eat fruits and vegetables since it’s mainly an apple salad with some other ingredients.

It can be eaten as vegetarian food or adapted to add chicken. Using red apples is recommended, they do not make the salad look “brown”, like green apples, do, but I made this for my in-laws who don’t like red apples cause they think it makes the salad look brown, so I made it with green apples.

The original recipe is actually only for one serving, when you double or triple the recipe and use a big bowl to mix all in, more than one serving can be eaten without having left-over salad

There is a variety of textures present in this visually appealing snack. Crispy nachos with tangy salsa, crunchy vegetables, soft feta cheese, and yogurt dip are the perfect complement to each other. This salad makes for an excellent starter or a meal served with soup.

I like it because of the combination of flavors and textures and especially because I can use leftover nachos!

It is a good recipe for eating in or taking to a pot-luck. It’s fast, easy, and delicious. You will also find that you have the most ingredients on hand making it economical as well!

It is a fantastic party snack that has never disappointed my friends or me. Having all the components on hand in advance will allow you to assemble the salad before serving easily. This way you can sit back and enjoy your guests instead of being tied up in the kitchen.

The salsa and yogurt dip last for 4 to 5 days in the refrigerator, and the nachos stay fresh for 15 days in an airtight container. Store-bought ones can also be used if you want.

“A popular story about nachos that has been circulated is that they were invented in the 1940s by Ignacio (“Nacho”) Anaya, a second-generation Mexican who ran a restaurant near Piedras Negras, near Eagle Pass, Texas. As the story goes, locals often called the restaurant asking for “something to eat”.

Anaya is said to have asked his sister (his restaurant’s cook) to put together a quick snack of tortillas and cheese and other toppings so that he could sell it as an informal dish. The original recipe was called “Especialidad de la Casa,” which is Spanish for “house special”. Variations of this recipe are now called nachos.

An alternative version credits Demetrio’s restaurant in Piedras Negras, across the border from Eagle Pass Texas, with inventing nachos in 1943. Ingredients For Yummy Mexican Salad With Nacho Chips

  • 2 tablespoon yogurt dip recipe here
  • 4 tablespoon salsa dip recipe here
  • 1 Green Apple (optional)
  • ½ cup onion cubed
  • ½ cup red and yellow capsicum cubed
  • 1/3 cup green capsicum cubed
  • 1 cup tomato deseeded and cubed
  • ½ cup lettuce chopped
  • 2 tablespoon spring onion chopped
  • 1 tablespoon coriander chopped
  • ½ cup feta cheese or cottage cheese cubed [BUY HERE]
  • 1 teaspoon tabasco
  • ½ teaspoon paprika [BUY HERE]
  • 1 teaspoon lemon juice
  • Salt to taste

  1. Transfer all the vegetables and feta cheese to a large bowl.
  2. Toss with lemon juice, salt, paprika, and Tabasco.
  3. Transfer the whole combo to a serving bowl and top with salsa dip and yogurt dip.
  4. Arrange the nacho chips all around the salad and serve.
