I always look forward to eating this delicious salad -it is made with cucumbers, tomatoes, onions, olives, feta cheese and all dressed up with olive oil.

This is my mom’s recipe and I have been making it for many years now. It may not be as elaborate or as sophisticated as some of the other salads that you may see…but it sure is delicious and gets the job done.

If you like to use tomatoes in your Greek Salad, by all means, do so…if not just leave them out. The salad still tastes great without them.

I have made this dish using only one cucumber and 2 tomatoes but I highly recommend adding the other vegetables as well, to keep it fresh and crunchy.

I like to use yellow onions but red onions are good too. Good quality olives are a must for this recipe if you want it to taste right. I prefer Kalamata olives as they have less liquid (and salt) than other types of black olives. But any kind will work.

As for the cucumbers… you can use English or Persian cucumbers but I love using Armenian cucumbers, and veggies which are long and thin and have a more intense flavor than others.

They are not easily available here in the US so I used an English cucumber melon baller to scoop out small balls of flesh from the skin and to make them look more like Armenian cucumbers.

Salads like this are a great side dish for any meal. The ingredients you need for this salad are likely to be in your pantry. The key ingredients are tomatoes, cucumber, onions, feta cheese (or soft paneer pieces in absence of feta cheese), and olives.

Served with lots of fresh vegetables, the Greek Salad is very healthy and delicious. It is not only a great way to use the summer produce but also makes a perfect picnic salad or a side dish

In addition to bell peppers, lettuce, and avocado, there are other vegetables that can be used as variations. To give the salad a lovely glaze, olive oil is used. The soft feta cheese, crunchy lettuce, and tangy dressing makes this salad a notch higher.
