Ingredients:

  • 1 medium-sized cauliflower head (cut into florets)
  • 100g paneer (cottage cheese) or tofu
  • 1 tbsp olive oil (for pasta)
  • 7-8 soaked cashew nuts
  • 4-5 cloves of garlic (minced)
  • 1 small onion (finely chopped-optional) 
  • 1 cup vegetable broth or water
  • 1 cup milk (coconut milk, dairy or plant-based, to thin it if required)
  • 1 tsp oregano or mixed Italian herbs
  • Salt and black pepper to taste

Method

  1. First, boil, blanch, or steam the cauliflower florets until they are nice and tender about 8-10 minutes. After cooking, drain the water and set it aside. Keep the broth to thin out the paste if required later. 
  2. Use a blender or food processor to incorporate all of the cooked ingredients, such as the cauliflower, onion, soaked cashew nuts, paneer, and garlic, and blend until creamy.
  3. Depending on your taste, season the white sauce with salt and pepper. You can furthermore use Italian seasoning or dried herbs. If you wish, you may add grated cheese for an extra cheesy taste.
  4. If it becomes too thick for your liking, you can thin the white sauce down by adding a bit of dairy or plant-based milk or water.

Mix with Pasta

In a pan, heat olive oil or ghee over medium heat. Add the chopped onion garlic, and veggies of your choice like red bell pepper, yellow bell pepper, green bell pepper, broccoli, baby corn, etc.. 

Sauté them until they turn translucent and fragrant, about 3-4 minutes.

After the sautéing is done, mix it up with the cooked pasta (Whole wheat, gluten-free) and the white sauce. Zucchini noodles also work great with this sauce.

Garnish & Serve:

To make the creamy pasta look more delicious, you can garnish the pasta with freshly chopped parsley or basil, add some pepper and eat up!
