Ingredients:
- 2 cups hung curd (strained yogurt)
- ½ cup grated cheddar cheese or cheese spread of your choice
- 1-2 large onion, finely chopped
- 2 tablespoons butter [BUY HERE]
- 1 teaspoon olive oil [BUY HERE]
- 2 garlic cloves, minced
- ½ teaspoon dried thyme (optional) [BUY HERE]
- ½ teaspoon dried oregano (optional) [BUY HERE]
- ¼ teaspoon black pepper [BUY HERE]
- ¼ teaspoon red chilli flakes (optional, for a bit of heat) [BUY HERE]
- 1-2 tbsp Italian Seasoning (my personal recommendation) [BUY HERE]
- Salt to taste
- Fresh chives or parsley for garnish (optional)
Instructions:
Step 1: Prepare the Hung Curd
- Take regular yogurt and place it in a fine mesh strainer or cheesecloth-lined colander.
- Set the strainer or colander over a deep bowl to collect the whey that drains out.
- Collect the yogurt in a clean muslin cloth and hand it in a place where it wont be disturbed.
- Let it strain for at least 4 hours or preferably 6 hours.
- After the yogurt has drained and thickened, you will have hung curd ready for use in the dip.
Step 2: Caramelizing the Onions
- On medium heat melt the butter and olive oil in a large skillet.
- To this mixture, add the finely chopped onions and cook on medium-low heat, stirring occasionally.
- Continue cooking the onions till they turn golden brown and caramelize.
- Add minced garlic to the caramelized onions and cook for another minute to release its flavor.
- Remove the skillet from heat and let the mixture cool.
Step 3: Preparing the Cheesy Onion Dip
- In a mixing bowl, combine the hung curd, shredded cheese/cheese spread, and grated cheddar cheese. If you don’t have cheddar cheese continue without it.
- Mix the cheeses until well combined, creating a creamy base for the dip.
- Stir in the caramelized onion and garlic mixture, distributing it evenly throughout the dip.
- Add dried thyme, dried oregano, Italian Seasoning, black pepper, red chili flakes (if using), and salt to taste. Mix all the ingredients thoroughly.
Step 4: Chilling and Serving
- Transfer the cheesy dip to a serving bowl and secure it with plastic wrap or a lid.
- Refrigerate the dip for at least 1-2 hours to allow the flavors to meld together.
- Before serving, garnish the dip with fresh chives or parsley for a touch of color and added freshness.
