You may have noticed that Hyderabadi biriyani is prepared in the dum style with the biriyani gravy at the bottom and the long grains of basmati rice on top.
Adding curry to the rice would help mix the rice with the biriyani gravy. However, it can quickly be served with any rice recipe or even a pulao recipe.

Ingredients For Cooking
For Masala Paste:
- 1 tbsp poppy seeds/khus khus
- 2 tbsp dry coconut (sliced)
- ¼ tsp methi/fenugreek
- 2 tbsp peanuts
- 2 tbsp sesame
- 2 clove garlic
- 1-inch ginger
- ½ cup water
For Salan:
- ½ onion (finely chopped)
- 1 tsp chilli powder
- ½ tsp garam masala
- 1 tsp coriander powder
- ½ tsp cumin powder
- 1 cup tamarind extract
- 2 tbsp coriander (finely chopped)
- 1 tsp mustard
- 6 chili (slit)
- ½ tsp turmeric
- 1 tsp cumin
- ½ tsp jaggery
- 1 cup water
- 3 tbsp oil
- salt to taste
- few curry leaves
Instructions
- Firstly, in a pan dry roast peanuts on low flame until they turn crunchy.
- Add sesame, poppy seeds, methi, and dry coconut and dry roast on low flame until they turn golden brown.
- Cool completely, and transfer to a small mixie jar.
- Add clove, garlic, ginger, and water.
- Blend to smooth paste adding more water if required. Keep aside.
- In a big kadai heat oil and saute the chili on medium flame until the blisters appear on chilli. Keep aside for later use.
- In the same oil, add mustard, allow it to splutter, and then throw in the curry leaves.
- Add onion and saute on medium flame.
- Now keep the flame on low, add turmeric, chilli powder,garam masala, coriander powder, cumin powder, and salt.
- Keep sauting on low flame until the spices turn aromatic.
- Now add the prepared masala paste and mix well.
- Add tamarind extract, jaggery, and mix well.
- Further, add fried chilli and mix adjusting consistency as required.
- Put a lid on the kadai and allow it to cook for another 10 minutes or until the oil separates.
- Add coriander and mix well combining well.
- Finally, enjoy mirchi ka salan with biryani.
