Frozen Raw

Many people use raw mangoes in their curries or desserts as a souring agent.
Raw mangoes should be cut into slices after peeling and sat on a tray covered with parchment paper or cloth to soak up moisture before freezing.
You should either overlap or touch the pieces as you do this. The tray/plate should be placed in the freezer after about 20 to 30 minutes.
Give them a couple of hours to chill. Place the chilled pieces in a ziplock bag or airtight container after they have cooled completely.
The raw mangoes can be peeled, grated, and frozen for up to 10 months in an airtight container.
