Cut unripe mangoes into small pieces or slices and add them to a clean jar. Boil a syrup from equal parts sugar and water, cool slightly, and pour it over the mangoes in the jar.
Leave about ½ an inch of headspace at the top of the jar. Wipe the rim of the jar clean, place a lid on top, and screw on the ring.
Process in a boiling water canner for 10 minutes. Let the jars cool completely before storing.
