Bilahir Tok: Tomato Chutney in Assamese Style
‘Bilahi’ in Assam means tomato and ‘Tok’ means tangy/sour chutney. This sweet n sour dish is so simple to make that it can be made within 10-15 minutes.
It is a tangy and sweet recipe, something which is definitely mouth-watering and can perk up a meal.
A delicious concoction, Bilahir Tok/Tomato Chutney can be used in so many different ways. All you require is season’s freshest tomatoes and a few regular ingredients of your kitchen.
The jaggery can be replaced with brown sugar in, and if you are diabetic you can, of course, replace jaggery or sugar with your trusted sweetener.

We had ours with khichri for a meal…and it all comes flashing back…the weddings, the Durga Pujas, and of course, my mom’s kitchen and dad’s smile.

Ingredients
- 5-6 medium ripe tomatoes sliced
- 1½ tsp Mustard Oil
- 1 small onion finely chopped
- 8-10 raisins
- 6-7 cashews
- A small piece of jaggery
- salt to taste
Tempering
- 1 tsp Panch Phoran
- 1 bay leaf
- 1 whole dried red chilli
- ¼ tsp turmeric powder
Instructions
- Heat the oil in a pan.
- Add the Panch Phoran, whole red chilli, and bay leaf.
- When the seeds start to pop, add the onion and tomatoes. Season with salt and add turmeric.
- Mix well, cover and cook (stirring occasionally) till the tomatoes are mushy.
- Add the jaggery and stir till it is dissolved and the tok thickens… just so that it is neither too watery or too thick.
- Stir nicely add cashews and raisins and remove from heat.
- Serve as a condiment with steamed basmati rice, khichri, poori, or even with rotis and other flatbreads.
