Vegetable Macaroni Soup (2 Recipes)

When I am not in the mood to prepare an elaborate lunch or dinner, yet I want to serve a hearty, comforting meal that’s both nutritious and easy to make, look no further than Vegetable Macaroni Soup.

This delightful recipe combines tender macaroni with a rich, savory broth and a medley of fresh vegetables, creating a dish that’s perfect for cozy nights in or a satisfying lunch.

Trust me when I say this…whether you’re feeding a family or prepping meals for the week, this soup is versatile, delicious, and sure to become a staple in your kitchen.

My mother can not have many tomatoes as they raise her uric acid levels (Read 9 Ways How To Reduce Uric Acid Level In Your Body), so I substitute the tomatoes with carrots and pumpkin. This alternate recipe is also given below in this post.

Vegetable Macaroni Soup With Tomato

Ingredients

  • 1tbsp olive oil
  • 1 tbsp finely chopped garlic
  • 1 onion finely chopped
  • Purée of 2 tomatoes
  • 2/3 tsp black pepper powder
  • 1 tsp sugar
  • ½ tsp red chilli powder (optional)
  • ¼ cup red capsicum
  • ¼ cup green capsicum
  • ¼ cup sweet corn
  • ¼ cup yellow capsicum
  • ¼ cup green peas (optional)
  • ¼ cup French beans
  • 1 tsp chilli flakes
  • 1 litre of water
  • 1 tsp Italian herb seasonings
  • 1½ tbsp arrowroot powder + 5 tbsp water (optional-for thickening the soup)
  • ½ cup elbow macaroni (boiled and set aside)
  • Salt as per taste

Method

  1. Take 1 litre of water, add 1/2 ts of salt and 1tsp oil and let it boil.
  2. Once the water starts to boil, add the elbow macaroni pasta and let it simmer for 8-10 minutes.
  3. While cooking the pasta, take a pan, turn on the heat, and add olive oil to it.
  4. Once the oil heats, add the chopped garlic and onions.
  5. Saute until golden brown, then add and saute all the other veggies. Remove from pan and set aside.
  6. Add Purée of 2 tomatoes, salt, and pepper to the pan and cook till the raw smell is gone
  7. Add the sauteed veggies, Italian seasoning, and the elbow macaroni pasta and mix with the water to get the right consistency.
  8. Cover with the lid & cook for about 7-8mins or until the flavors are incorporated into each other.
  9. Garnish with spring onion greens & serve hot!
  10. NOTE: 1.5 tbsp arrowroot powder + 5 tbsp water (can be added to thicken the soup). This step is optional. Also, here I have used arrowroot, which is a much healthier alternative to corn flour & does the job perfectly

Ingredients

  • 1 tbsp olive oil
  • 4-5 whole garlic
  • 1 tsp finely chopped garlic
  • 1 onion finely chopped
  • 2/3 tsp black pepper powder
  • 100 gms Pumpkin peeled and chopped
  • 100 gms carrot peeled and chopped
  • ½ tsp red chilli powder (optional)
  • ¼ cup red capsicum
  • ¼ cup green capsicum
  • ¼ cup sweet corn
  • ¼ cup yellow capsicum
  • 1 tsp chilli flakes
  • 1 litre of water
  • 1 tsp Italian herb seasonings
  • 1½ tbsp schezwan chutney (optional)
  • ½ cup elbow macaroni (boiled and set aside)
  • Salt as per taste

Method

  1. Take a cooker add 1/2 tsp salt carrots, pumpkin and 4-5 full garlic and boil till you get 2-3 whistles.
  2. Remove from fire, open the cooker, and keep aside to cool.
  3. Once cooled, put in a mixer or blender and make a puree.
  4. Take 1 litre of water, add ½ tsp salt+1 tsp oil, and let it boil.
  5. Once the water starts to boil, add the elbow macaroni pasta and let it simmer for 8-10 minutes.
  6. While the pasta cooks, take a pan, turn on the heat, and add olive oil.
  7. Once the oil heats, add the chopped garlic and onions.
  8. Saute until golden brown, then add the other vegetables and saute them. Remove from the pan and set aside.
  9. Add Purée of carrot and pumpkin.
  10. Add salt and pepper, the sauteed veggies, Italian seasoning, and the elbow macaroni pasta, and mix while adding water to get the right consistency.
  11. Cover with the lid & cook for about 7-8mins or until the flavors are incorporated.
  12. Garnish with spring onion greens & serve hot!

This second version is an excellent recipe for people with kidney problems or high uric acid levels.
