Easy Pineapple Upside-Down Cake 🍍

A lovely pineapple upside-down cake recipe that’s incredibly straightforward to make. Excellent for a summer dessert!

This easy pineapple upside-down cake is one of my all-time favorite summer desserts. It’s refreshingly sweet, and the tropical flavors of the pineapple and rum make it feel like a real vacation in a cake. Plus, it’s super uncomplicated to make – no special baking skills required!

For the finest Pineapple Cake, use fresh pineapple. The vanilla and citrus fragrance lightly permeates the batter. The sticky topping is made of butter, brown sugar, mild cinnamon, and fresh pineapple.

Simple and delicious!

We adore serving this cake warm with a little whipped cream, but ice cream will taste just as good. Consider this a “refined” version of traditional pineapple upside-down cake.

Ingredients For Easy Pineapple Upside-Down Cake

For the cake

  • 1 tin Pineapple slices 🍍
  • 200gms unsalted butter
  • 200 gms Powdered sugar
  • 200 gms Maida
  • 5 Eggs
  • 2 tsp Pineapple essence
  • 2 tsp Baking powder   
  • 15nos Whole cherries 🍒

For the caramel…

  • Ÿ cup Brown Sugar
  • ÂŒ cup Water

    Instructions For Easy Pineapple Upside-Down Cake

    1. Preheat the oven to 180 degrees
    2. Prepare your tin.
    3. Apply a teaspoon of butter inside the cake tin.
    4. In a pan, caramelize the sugar by adding water to a golden caramel.
    5. Pour this mix into the cake tin, carefully coating the bottom of the tin and spilling over the sides.
    6. After you empty the caramel from the pan, pour some liquid from the pineapple tin to make a glaze. Keep aside.
    7. Carefully place pineapple slices on the caramel.
    8. Place one or two cherries inside the hole of the slice as shown.
    9. Beat the unsalted butter and sugar till light and fluffy.
    10. Add eggs one at a time and continue beating.
    11. Sift flour with the baking powder and add this mixture slowly to the butter-sugar-egg mix.
    12. Add pineapple essence. Pour this mix into the prepared baking tin. Tap once to distribute the batter evenly.
    13. Bake at 180 degrees for 25 – 30 minutes. Please check if the cake is cooked by inserting a toothpick.
    14. It should come out clean or with crumbs when ready.
    15. After the cake is baked, take the cake out of the oven and cool slightly on a rack for approx 10mins.
    16. Place a plate or a cake stand on the tin in a reverse position and carefully turn the cake upside down.
    17. Voila… The beauty of the experience emerges!!
    18. Spoon some glaze we made earlier onto the cake when still warm.
    19. The cake will soak all the richness
    20. Enjoy it warm or cooled!!
