    The most common masala used in this dish is garam masala, which is a blend of ground spices like cloves, cinnamon, cardamom and black pepper. 

    Other spices like turmeric, cumin and chili powder can also be used to make this dish. Masala rice can be made with either basmati or long grain rice. I prefer to use basmati rice for its flavor and aroma.

    To make this dish, the rice is first cooked in boiling water until it is tender. Then, the spices and other ingredients are added and cooked together until the rice is infused with all the flavors.

    Here I demonstrate 2 ways to cook masala rice- first, by using a rice cooker and the second by using a saucepan. You can choose which=chever is convenient for you.

    How To Make Masala Basmati Rice

    Masala rice can be served with raita or yogurt, pickles and papadums. It can also be enjoyed with a main course of chicken or lamb curry.

      Cooking Method

      In A Rice Cooker

      1. Wash the rice in a bowl under running water, gently stirring and mixing it with your hands and draining each time the bowl fills.
      2. Repeat 2 to 3 times till the water runs clear.
      3. Put the rice in a rice cooker and add 3 ½  cups water. 
      4. Then let soak covered for 1 hour.
      5. Then add green cardamoms, cinnamon, bay leaf, cloves, star anise, and 1¼ teaspoon sea salt. Put the lever of the ice cooker on ‘cooking’ mode. 
      6. When the lever automatically goes to ‘keep warm’ mode, the cooked rice would be soft but not overcooked. 
      7. Fluff up gently with a fork and serve hot.

      In A Saucepan

      1. The rice should be placed in a bowl and washed under running water with your hands, gently stirring and mixing the rice as it fills up, draining as it fills.
      2. Continue to repeat until the water runs clear; then let soak for 1 hour in fresh water, covered. Drain the water.
      3. Add 6 cups of water to a saucepan over medium heat.
      4. Cook the water till it boils, then add the cinnamon, bay leaf, green cardamoms, cloves, star anise, and 1¼ teaspoon sea salt. 
      5. The rice should be soft but not overcooked when added, drained and cooked for 10-11 minutes.
      6. Drain the water.
      7. Gently fluff up with a fork and serve hot.
