My Mom is from Gujarat, and my Mom learnt this authentic recipe from my grandma so I can rightfully claim that this recipe is 100% authentic.

It has been passed down the generations, except for the fact that I don’t grind the chickpea and ferment it like the traditional method of making this delectable snack.

Ingredients

For dhoklas:

  • 2½ cup chickpea flour/besan –
  • 5 tsp sugar
  • ¼ tsp turmeric powder
  • ½ tsp citric acid or lemon juice – 1 tsp
  • salt to taste I used 1 tbsp
  • 1 tsp fruit salt or baking soda
  • bell pepper (optional) halved and deseeded – 2

For tempering:

  • 1 tbsp oil
  • 1 glass water
  • 2 tsp mustard seeds
  • 1 tsp sesame seeds
  • 2 green chilies slit
  • 1½ tbsp sugar
  • pinch of salt
  • 1 tsp lemon juice

Instructions

For Dhokla

  1. Take a mixing bowl.
  2. Add chickpea flour, sugar, salt, turmeric powder, citric acid/lemon juice.
  3. Add ¾ cup of water and whisk well to get a thick and smooth batter.
  4. Prepare pressure cooker or steamer. Boil water in a steamer.
  5. Add the fruit salt/soda to the batter just before steaming and mix lightly until batter is light and fluffy.
  6. Grease container. Pour the mixture immediately and spread evenly by rotating the container clockwise.
  7. Fill the container ⅜, like we do for cake baking.
  8. Steam in a steamer for 12-15 minutes or till the dhoklas are cooked.
  9. Insert a toothpick to check if Dhaka is cooked if it comes out clean then dhokla is ready. If not, steam for few more minutes. Keep aside.

For Tempering:

  1. Heat the oil in a small non-stick pan and add the mustard seeds.
  2. When the seeds crackle, add the sesame seeds, green chilies, and sauté on a medium flame for 30 seconds.
  3. Add 1 glass water, sugar, salt, lemon juice and mix well.
  4. Let it come to a boil, and remove from heat.
  5. Pour the tempering over the prepared dhoklas and spread it evenly.
  6. Cut into pieces and serve immediately garnished with onions. And serve with green/red chutney or ketchup.

I am a BIG dholka fan. Whenever I visit my mother I have only one standard demand… and it is eating Dhokla.

I can devour this throughout the day. The dhokla is so tasty that I don’t feel like having anything else with this. ?

For Variation in Gujarati Dhokla Recipe

You can try Capsicum Dhokla if you love capsicum/bell peppers (green/red/yellow)

  1. Pour 1 tbsp of the khaman batter into each of the 2 capsicum/bell peppers halves and steam it in a steamer/pot in pot for 8-10 minutes.
  2. Remove from the steamer/pot in pot and allow the capsicum/bell peppers with dhokla to cool slightly.
  3. Cut each khaman dhokla capsicum/bell pepper halve into 2 pieces vertically and serve with chutney.
