My entire family loves Chinese food. My kids absolutely adore the simple and yummylicious fried rice in the way I cook and could probably eat an entire bowl if I’m not looking.

It never is a lot of work to cook fried rice.

They absolutely love it and agreed that it tasted as if straight from a restaurant. A formal dinner or cooking for my kids’ tiffin this fried rice recipe always comes in handy.

My daughter’s friends at her college and my colleagues are extremely fond of this fried rice recipe.

They have often requested me to share the recipe with them. Though I have often done so, but someone would always forget to add something.

So finally I decided to get it out on the print for all.

I have always served this fantastic fried rice recipe with all of my Chinese cuisines.  It is easy to prepare and goes perfectly as a superb side dish. 

The best thing about this recipe is that you can add whatever you would like!

I have added chicken popcorn to it because my son loves it but that’s optional. I normally cook it without chicken with loads of veggies.

I use pre-cooked leftover rice. It is a perfect fried rice base and the food experts say the secret ingredient to get the authentic Chinese taste is sesame oil but my personal favourites are olive oil or Saffola gold.

Ingredients

  • 1 cup cooked rice
  • 2 tbsp olive oil
  • 3 tsp  Schezwan Sauce
  • 1 small white onion chopped
  • 1 cup frozen peas and carrots thawed
  • 1 cup frozen carrots thawed
  • 1 cup frozen corn thawed
  • 2 eggs lightly beaten (optional)
  • 2 Tbsp chopped green onions optional

Instructions

  1. Preheat a large skillet or wok to medium heat. Pour olive oil and add the FoodAllTime tadka with curry leaves.
  2. Add white onion and sauté.
  3. Add frozen peas, corn and carrots and fry until tender. (No salt yet)
  4. Add the Schezuwan Sauce and salt.
  5. Add the rice to the veggies. Stir and fry the rice and veggie mixture until heated through and combined.

Cover with the lid and allow it to cook for 5 minutes. Add chopped green onions if desired. Serve hot. (See recipe notes for variations)

Recipe Notes

  • I usually cook my fried rice with day-old rice. If there is a party in the evening and Chinese food is on the menu then I cook rice in the morning and refrigerate. It will still taste great if you are not able to do this but it might turn out to be sticky.
  • In case you don’t have time to make the Schezwan Sauce you can buy it online from the below links.
  • You can add capsicum or any other veggie.
  • If you want to add proteins then you can beat an egg nicely, add a little salt to it and add to the fried rice stirring all the time. Cook for about 5 mins and you are done.
  • Or Slide the onion, peas, and carrots to the side, and pour the beaten eggs onto the other side. Using a spatula, scramble the eggs. Once cooked, mix the eggs with the vegetable mix.
