The 7 Cup sweet (also known as 7 cups) is a sweet dish popular in south India. This is a well-known south Indian sweet dish recipe that can be served for any occasion. 

The most common time for these celebrations are weddings, birthdays, religious observances, baby showers, etc.

The dish is made with equal parts of milk, coconut/cashew, besan, ghee and sugar. The dish is then flavored with cardamom powder and ghee.

A garnish of chopped nuts is usually placed on top of the dish before serving. 

There are no elaborate ingredients or procedures required for the seven cups sweets recipe. In just minutes, you can make this dish and serve it either hot or cold. 

A traditional recipe calls for 1 cup each of flour, ghee, milk, and coconut, along with 3 cups of sugar, for a total of 7 cups. As a result, the name was born.

This recipe is great because you can measure the ingredients with any cup or bowl. The cup does not have to be a standard size like 240 ml or 250 ml.

The most common flour used in the preparation of this sweet is gram flour. There are also versions made with maida (all-purpose flour) or semolina combined with maida.

This traditional 7 cup burfi recipe would be made by my neighbor in numerous variations. The ingredients she would use included gram flour, rava, maida, and dried coconut (copra). The taste of each version is so different from the other, and they all turn out so good.

    There is an additional taste and aroma of coconut in this 7 cup burfi, which tastes very similar to the traditional Mysore pak. It is made using the traditional recipe, which results in overly sweet burfi.

    With this recipe, you’ll have a 7 cup burfi that melts in your mouth & has a slight crunch like a traditional Mysore pak. My notes below will guide you through making a soft set burfi.

    With this recipe, you don’t have to make sugar syrup or check the consistency. As a result, this recipe can simply be thrown together and eaten.

    As a result, the recipe I shared here is a modified/improved version that has less sugar and I am sure you will enjoy it. 

    In order to achieve that perfect sweetness, I have gradually reduced the quantity of sugar over the years. There are two parts of sugar in the recipe instead of three. 

    How To Make 7 Cups Sweet Barfi

    Ingredients

    Method For Making 7 Cups Sweet

    1. Take a large kadhai/pan, add 1 cup besan and 1 cup ghee, and stir fry until it’s golden brown.
    2. Mix besan and ghee until it’s combined well.
    3. Now add 1 cup of grated coconut, 1 cup of sugar, and 2 cups of milk.
    4. Mix everything well without forming any lumps.
    5. Continue to cook on medium flame.
    6. Keep stirring until the mixture thickens. As the mixture cooks, the ghee separates from it. It takes approx. 50 minutes.
    7. Transfer the hot mixture into a greased pan/container.
    8. Allow it to set for 15-20 minutes.
    9. Now slowly cut into desired shapes and unmould the pieces carefully.
    10. Finally, 7 cups dish is ready to serve.
    11. Add badam/pista as garnishing (optional)

    Important Tips:

    1. Stir fry in low flame for 5-10 minutes.
    2. Mix besan and sugar slowly to avoid any lumps.
    3. For cutting into pieces using a greased knife is preferable.
    4. If you like your burfi as soft set and not the perforated one then pour in all the ghee at one time.
    5. Don’t cook on high flame.
