It is made by cooking potatoes in a tangy tomato curry. Just the thought of it sets my mouth to water. It is best-served piping hot with mango pickle and green chillies.

Ingredients

  • 4 large Potatoes (boiled, peeled and mashed roughly)
  • 1 tsp Olive Oil
  • 1 tsp Cumin Seeds /Jeera
  • 2 Bay leaves
  • 1 tsp FoodAllTime Garam Masala
  • 1 tsp Amchur
  • 1 tsp Kalongi/Nigella sativa
  • 2 sprigs Curry leaves
  • 3 tsp Green Chillies and ginger paste
  • 1 pinch Asafoetida/Hing
  • Mint Leaves a handful finely chopped
  • Coriander leaves a handful finely chopped
  • Water as needed
  • Salt to taste

Instructions

  1. Heat oil in a pan

  2. Add bay leaves, curry leaves, cumin seeds and The Kalongi/Nigella seeds and let them sizzle.

  3. Add tomatoes, ginger-green chilli paste, amchur, salt and hing/asafetida and cook till soft and pulpy.

  4. Mash the boiled potatoes unevenly with your hands.
  5. Toss the potatoes well in the tomato puree and add water, chopped mint leaves and FoodAll Time Garam Masala.
  6. Now bring this to a boil.

  7. Cover with lid and simmer for 5 mins.
  8. Add coriander leaves and serve with mango pickle and poori.
