Ingredients

  • 4 large Eggs
  • ¼   cup milk
  • 2 pinch Salt as desired
  • 1 pinch Pepper as desired
  • 1 pinch red chilli flakes optional
  • 1 pinch Italian Seasoning optional
  • 2-3 Fresh mint leaves optional
  • 4-5 Curry leaves optional
  • 1 tsp.  butter

Instructions

  1. Takes eggs in a bowl. (representational image only)

  2. Add milk, red chilli flakes, chopped mint leaves, salt and pepper in medium bowl until blended.

  3. Beat egg mixture. 

  4. Heat butter in a large nonstick pan over medium heat until hot. Add curry leaves and let it become crisp, but don’t burn them.

  5. Pour in egg mixture and let it sit, without stirring, for 6 seconds. As mixture begins to set, gently pull the mixture across the pan with a spatula, forming large soft curds.
  6. Continue cooking, pulling, lifting and folding eggs all the while – until thickened and no visible traces of liquid egg remains.
  7. Do not stir constantly or overcook it.
  8. Remove from heat and serve immediately with your choice of bread.
