Aloo Sheddho Bhaat: My Quintessential Comfort Food

On Sundays when I feel too lazy to cook I am reminded of Mom’s kitchen back home, I can see my maa busy cooking begun bhaja, Aloo Sheddho, steamed basmati rice and sambhar.

  • 4 medium-sized potatoes
  • 2 tsp pure mustard oil
  • 4 tsp ghee/butter for garnishing 1 tsp per serving
  • 2 medium finely chopped red onions
  • 2-3 Finely chopped green chilli peppers remove seeds and membranes if you do not want it spicy
  • 2 medium eggs hard boiled (optional)
  • 200 grams bottle gourd/bitter gourd/squash boiled and mashed (optional)
  • salt to taste


  1. Boil potatoes until tender (also try Pot in Pot cooking)

  2. Drain. Cool, Peel (if you boiled with skin on) and mash them really well until lump free.

  3. Add salt, mustard oil, onion and peppers. 
  4. Eggs and above-mentioned veggies are optional.
  5. Mash and combine everything together one more time.
