  7. While the cupcakes are in the oven, make your frosting by beating the frosting ingredients together with a beater in a medium-sized mixing bowl. Store in the refrigerator until ready to use.
  8. When the cupcakes are ready, cool them entirely before topping with the frosting.

Using a muffin tin or different mould may change your yield.

Also, we got the coconut cream by putting a can of full-fat coconut milk in the rear of the fridge for a few days. Once the fat becomes solidified, you can drain off the excess of the liquid and use only the fat to make this frosting.

Chocolate Topping

  • 4 oz unsweetened baking chocolate
  • ¼ cup coconut oil
  • 1 tsp pure liquid stevia
  • ¼ cup powdered erythritol 
  • ⅛ tsp sea salt
  • 1 tsp pure vanilla extract

Garnish

  • ½ cup slivered almonds

Instructions

  1. Mix the bar ingredients in a mixing bowl. When done, it should have the consistency and feel of medium-wet cookie dough. It should hold it’s form but should be somewhat gluey.
  2. Smooth the dough into a snack bar baking pan and bake at 350° F for 30 minutes. Cool and remove from pan.
  3. Now, melt the chocolate in the microwave while the bars are baking, first for 1 minute, and then at 30-second pauses until the chocolate melts. Mix every time the microwave stands, so that you don’t overcook the chocolate.
  4. Toss in the topping ingredients in the order as listed. Add the vanilla at the end and that too ONLY after the chocolate’s temperature has gotten between 100 and 110° F
  5. A simple kitchen thermostat will help you well here.
  6. Spoon the chocolate covering the bars, top with the almond if aspired and freeze for about 30 minutes to set the chocolate.
  7. Store in the refrigerator.

Note that you can also smooth the dough into a casserole dish and cut after baking.

  2. Combine all the rest of the ingredients in a bowl, and stir well to ensure that zucchini is coated evenly in spices and sweetener.
  3. Arrange the zucchini into the pie crust, cover loosely with foil and bake for approx 40 min or until the zucchini is cooked to your desire.
  4. Cool completely before serving.
  5. This dish tastes excellent when served with low carb whipped cream!

Recipe Notes

Please note that there are 96g of sugar alcohol in the complete recipe and should be deducted to get your net carbs.

If you should divide the recipe into 8 servings then 12g of sugar alcohol should be subtracted off the nutrition label per serving.
