An extremely popular paneer gravy recipe, paneer ki bhurji gravy street style is made by crumbling paneer and blending spices.
In essence, it is a vegetarian version of the popular egg bhurji recipe, but it uses the same set of spices and ingredients.
It is usually served as a side dish with bread or pav, but also tastes great when served with roti/chapati, paratha, or naan for lunch and dinner.
Recipes with paneer are always a favorite of vegetarians. Paneer is generally used in curries as cubes or stuffed into snacks for a creamy and spongy texture.
Some egg alternatives can be used in place of crumbled paneer or bhurji, which provide the same creaminess and richness without egg.

This recipe is healthy, quick, and most importantly very tasty as compared to traditional curries and sabzi recipes. Authentic bhurji is traditionally made with eggs. However, paneer can provide a similar texture and flavor.
Additionally, this is a gravy recipe that is native to the dhaba style or street style. By adding besan flour to the gravy, you will be able to achieve the desired texture and creaminess.
The dhaba style preparation would also add sour thick curd but i have skipped both in this recipe as paneer crumble would provide the same creaminess.

Paneer Bhurji Gravy Recipe: Ingredients
- 1 tsp butter/oil/ghee [BUY ONLINE]
- 1 tsp cumin [BUY ONLINE]
- 1 onion (finely chopped)
- 1 tsp ginger paste [BUY ONLINE]
- ¼ tsp turmeric (optional)
- 1 tsp chilli powder [BUY ONLINE]
- 1 tsp coriander powder [BUY ONLINE]
- ¾ tsp salt
- 1 tbsp besan/gram flour (optional) [BUY ONLINE]
- 3 tomato (finely chopped)
- ½ capsicum (finely chopped)
- 1 cup water
- 200 grams paneer / cottage cheese (crumbled)
- ½ tsp garam masala
- 1 tsp kasuri methi (crushed) [BUY ONLINE]
- 2 tbsp coriander (finely chopped)
- curry leaves (2 sprigs)
Paneer Bhurji Gravy Recipe: Instructions
- Heat oil, and add cumin and curry leaves in a large kadai. Toast the cumin until aromatic.
- Add 1 onion and 1 tsp ginger paste and sauté until golden brown.
- Then add turmeric (optional), cumin, coriander, salt, and besan, keeping the flame on low. I prefer mine without turmeric.
- Saute until the spices turn aromatic. Adding besan gives nice thickness and body to the gravy. (optional)
- Further, add 3 tomatoes and saute well.
- Saute until the tomatoes turn soft and mushy.
- Also, add ½ capsicum and saute for a minute. (optional)
- Now add 1 cup water and mix adjusting the consistency as required. Incorporate this step if you add besan. This step is not needed if you haven’t added besan
- Further, add 200 grams of crumbled paneer and mix well.
- Cover and simmer for 2 minutes. Do not overcook as the panner will turn chewy.
- Add coriander also as garnishing.
- Finally, enjoy paneer bhurji gravy with pav or chapati.

- Also, I would like to offer some additional tips, suggestions, and variants to the paneer bhurji gravy recipe. I think the most important aspect of this recipe is selecting the right paneer.
- While preparing the gravy, it must be moist, fresh, and easily crumbled without dissolving. Homemade paneer is ideal for this recipe.
- Secondly, adding besan is not mandatory in this recipe and it may be completely omitted.
- The addition of besan can improve the consistency and creaminess of the gravy, but it may also thicken it.
- If you want to avoid it, feel free. Last but not least, if you like eggs, you can add an egg or paneer to make it tastier.
- You can add ½ tsp garam masala, 1 tsp kasuri methi, and 2 tbsp coriander also as garnishing.
- To make homemade paneer add lemon juice to the milk when it starts boiling. If you want even more creamier paneer then add curd instead of lemon juice.
- The whey can be consumed after cooling as it is loaded with proteins and can be added to rice when you are cooking rice, but it shouls be consumed fast.
