Despite being brought up on only Indian food, I am fascinated by Indian cooking, which at the same time allows me to play around with flavors and combinations. This Indian-style fried chicken has a few noteworthy features.
Let’s start with brining. Brining involves letting the chicken sit in highly salted water at room temperature for several hours. Water should be at room temperature (you can take the water from your RO directly), neither too hot nor too cold.
Due to its inherent property, salt breaks down the fibers of chicken meat and penetrates within; this ensures that even the meatiest portion of the chicken drumsticks becomes well-seasoned to the core.
As soon as the chicken pieces are brined properly, they must be rinsed thoroughly to remove the excess salt. Now they are ready for the spicy marinate with FoodAllTime garam masala, mint, etc.
The first aromatics spices applied to the chicken drumsticks (LEGS) are ginger and garlic. You can boost the taste of raw chicken by massaging it with ginger and garlic paste.
In Indian-style chicken curries, I always do the same thing. In order for this wonderful Indian fried chicken to taste as great as it does, this step is necessary. Unlike bringing, this step cannot be skipped.
Next comes the final loading of spices. This Indian chicken fry is heavily spiced with coriander, i.e. dhania powder, cumin, i.e. jeera powder, FoodAllTime garam masala, olive oil, Kashmiri chili powder, and kasoori methi, mint, tandoori food colour (optional).

You can alternatively add a teaspoon of RUM or RED WINE. Last but not least, to get the crispy outer coating on the fried chicken, all-purpose flour, and cornflour i.e. maida, will do the trick.
If you are in a rush (like I am when my kids suddenly demand it), you can avoid the flour. It will continue to be as tasty as ever but a little less crispy.

- 8–Chicken drumsticks
For brining:
- 1 ltr Water at room temperature पानी
- 1 tbsp Salt नमक
First marinate:
- 1 tsp FoodAllTime Multipurpose Paste
- 1 tsp Salt as per taste नमक
- 1 Lemon juice निम्बू का रस
Second marinate:

Instructions For Easy Indian Chicken Fry Recipe In Curd
- Dry the drumsticks by scrubbing them with a dry towel. Make several deep gashes on the meaty portion of the drumsticks using a sharp knife. Now they are ready for the brining.
- Bring enough water to cover all chicken pieces in a large bowl before brining. Then add all the drumsticks to the bowl with 1 tablespoon of salt. Refrigerate the chicken bowl for a couple of hours. You can skip this step if you are in a hurry.
- Bring the chicken pieces out of the salted water once the brining is completed and thoroughly rinse them. discard the brining water.
- To make the first marinade, place the drumsticks in a large bowl with the ginger and garlic paste, salt, and one lemon juice. Cover & let them sit for 30 minutes to an hour. Massage them well into each drumstick cut.
- Start the second marination after an hour. All ingredients listed under second marinade, along with the ginger-garlic paste and salt, should be added to the chicken pieces already coated with ginger-garlic paste.
- All the spice powders, curd, and flour should be applied to all cuts of the chicken thoroughly. By doing so, you’ll be able to enjoy a flavorful and succulent chicken dish. Make sure the drumsticks have enough time to absorb all of the flavors after marinating them.
- Deep-fry the chicken in a pot with sufficient oil for frying. Let the oil become hot.
- Drop the drumsticks one by one into the hot oil once the oil is hot. Let the chicken soak up as much marinade as possible. You can cover and let it simmer for 6 to 8 minutes on medium-low heat if it starts to splatter.
- Turn the chicken over after about eight minutes in order to ensure even cooking.
- After 6 to 8 minutes, flip the chiken legs and cook it for another 6 to 8 minutes. Put them on a plate after they have been taken out.
- Increase the heat and allow the oil to become super-hot.
- After the oil has reached a high temperature, reduce the heat to medium and return the drumsticks to the hot oil for one more minute. In this second fry, the outer coating of the chicken will become super crispy, while the juicy, succulent meat inside will remain intact. (Optional if you want it to be crispier)
- After 1 minute, remove the Indian-style fried chicken from the hot oil and let them cool for a few minutes before serving.
You can serve this Indian fried chicken with onion rings and mint chutney on the side along with some chat masala. Enjoy!
