Scrambled eggs are quick and easy to make, and they can be effortlessly customized to your liking with a variety of different ingredients.
What’s the secret to it? Mix cornstarch and milk into a slurry before cooking, then add eggs and the spices required. You can alternatively use potato or tapioca, but cornstarch may be more readily available in your pantry. This is a secret ingredient that no chef/or blog will tell you about. I’ve tried both potato starch and cornstarch. However, the difference between the potato starch and the corn starch was subtle.
Let’s take this brilliant secret tip one step further by adding a bit of cubed butter to the egg mixture. Some of the butter is added to the pan, and some butter is whisked into the eggs themselves. As the eggs cook, the cubed butter slowly melts, yielding eggs that are moist, fluffy, and creamy.
For four eggs, use two teaspoons of cornstarch dissolved in 1 1/2 tablespoons of milk—you can use water or half-and-half.
It prevents the eggs from overcooking and becoming rubbery because the starch binds with the protein. As a bonus, the starch prevents water from leaking out of the eggs once they are cooked through – every breakfast cook’s worst nightmare!

Ingredients
- 4 large Eggs
- ¼ cup milk
- 2 pinch Salt as desired
- 1 pinch Pepper as desired
- 1 pinch red chilli flakes, optional
- 1 pinch Italian Seasoning, optional
- 2-3 Fresh mint leaves optional
- 4-5 Curry leaves optional
- 1 tsp butter
- 2 tsp cornflour
Instructions
- Mix milk and cornflour in a bowl and make a slurry of it.
- Break eggs in the same bowl and beat the eggs gently.
- Add a small cube of butter, red chilli flakes, chopped mint leaves, salt, and pepper to a medium bowl until blended.
- Beat egg mixture.
- Heat butter in a large nonstick pan over medium heat until hot. Add curry leaves and let it become crisp, but don’t burn them.
- Pour in the egg mixture and let it sit without stirring for 6 seconds. As the mixture begins to set, gently pull the mixture across the pan with a spatula, forming large soft curds.
- Continue cooking, pulling, lifting, and folding eggs all the while – until thickened and no visible traces of liquid egg remain.
- Do not stir constantly or overcook it.
- Remove from heat and serve immediately with your choice of bread.

Spice up this easy egg favourite by adding Red Chili Flakes, Italian Seasoning, Fresh Mint Leaves, onions, green chillies, cilantro, tomatoes and Curry Leaves etc or lighten it up by substituting water for milk and olive oil for butter.
Avoid cast iron. Scrambled Eggs in a cast iron pan/wok often bear the risk of turning greenish shade.
This harmless but unappealing colour can put off your appetite. This change is the result of a chemical reaction between iron in the pan and sulfur in egg whites.
NEVER overcook your incredible eggs. The heat that is retained in the pan will continue to cook and firm up the eggs even after your pan is removed from heat.
You might be wondering as to, “How long should I beat my egg?” Well, It’s a matter of choice.
Light beating produces denser scrambled eggs. Vigorous beating aerates the eggs, resulting in lighter fluffier curds.
It’s always the best policy to serve scrambled eggs as soon as they are cooked, but if necessary, you can delay eating by a short time…say 5 minutes!
Rather than putting the pan over direct heat place the cooked eggs over a pan of hot water and cover with lid.

This is a great recipe for breakfast or for that matter any other meal. It is a complete meal in itself, It is also healthy, unfortunately, the nourishment of eggs is not available for vegetarians who need to look for other options.
